That's really useful, but is it possible to hide a field from the notifier?
I have a couple of hidden fields I'm using for validation and whilst I'd like to hide empty values in emails, not showing hidden fields is a bigger priority.
As it is currently, locking the table means these hidden fields are then put back into the email.

Yes, you can remove any fields from the email autoresponder / notifier and it will not be shown to the person receiving them.
This is as simple as opening the notifier and erasing the field that you do not want to be shown.
You could also set up the email notifications in such way that you get all details, but others get notifications that do not hold the hidden fields.
Using Dates in Email Templates (the same place we add the date is where we can remove fields)

My question is, is it possible to hide empty fields in emails and choose for certain other fields (that are not empty) to not show up?
Yes, that is what I was mentioning as well, but I might not have described it properly.
The option to hide empty fields will only hide empty fields and there is no other option that would allow you to hide some other fields as well.
To do so you would need to remove them from the actual email body.
To showcase this, I am adding two screenshots.
With all fields on a jotform to be sent:
With only 2 I want to send (if not empty)
After this change only the Full Name and E-Mail will get sent to the email set.
This way you can hide any fields hidden on the form itself, but that get shown on the email notification.

Thanks this answered my question. It would be useful to be able to do both. Might I suggest it as a feature request?
I am glad that you found the answer you were looking for and I can raise this as a possible feature for our developers.

This is correct.. =) It does become a custom email template at this point.

this is partially incorrect. The field in the email that will not be updated is only that deleted email field, the other field should still function as normal.
Another solution I can suggest that I think might work for the requirement, is using the method described on this user guide (which our colleague Ben had already mentioned previously)
1. Add multiple Notifier
2. Each Notifier is a custom email template (some of the fields are delete/remove so that they are not included in the email message)
3. Create a condition logic that will only send email base on the choices the form respondent will do in the form.
Basically, depending on the user cue response on the form, the sent Notifier email will dynamically change. This will then appear as if some fields/questions/answer in the email sent is hidden by choice.
