I'd like to change the email address that is used on the submit button.

To change the email address that your notifications are sent to you need only change the address in your notification. Here is our guide on setting this up:
Keep in mind that when you send a test through the form builder, the email will always be sent to the default address associated with your account. To test other addresses, you will need to send an actual submission through your form.
