Hi Daniel,
I've checked your Signable Document and I can see that you have enabled Past dates to be selected for the Date field. I've tested the Date field of my test document and I was not able to replicate the issue. I can select past dates.
Can you please try deleting the existing Date field in your document and add it again? After adding it, kindly make sure that you enable the Past dates.
Give it a try and let us know how it goes.
