I would like to be able to preserve the import date or edit it after import. Is this possible?

Yes it is possible for you to do this. Please note the instructions below on how to get this done.

But the Submission Date is not one of the fields on the form. Click edit and look for Submission Date please.
Submission date and Submission ID are generic read only fields that are created and placed in every form's submission report when though they are not displayed on your form. These fields cannot be changed compared to other fields on your form. Are these the fields you would like to amend?
Yes because I am importing data from Adobe Forms Central. The submission time is the time of import.
The Long Story
There was a form in Adobe Forms Central.
The form was imported into Jot Forms.
I replaces the Name Text fields with the Full Name from Quick Tools (First Name, Last Name).
I replaced the phone number next with Phone from Quick Tools.
I replace the address text box with the Address from Quick Tools.
I then deleted all the imported submissions and tried to import from a CSV file.
Even when I formatted the name Last Name, First Name - the name did not import.
The submission times were set to the import date.
Submissions Date is only generated on the server side and does not accept data from import as of the moment.
The workaround is to add a DateTime field to your form (it's under Quick Tools) and then hide it so it is not seen on the live form. (Right click the field then Hide Field). Now, on your form submissions page you will see a separate column for DateTime field. This is where you are going to import your submissions date by of course following the import guide columns here. http://import.jotform.io/
With regards to the other fields, just make sure the column names matched exactly on the example provided after selecting a form.
