If using the "secure" (https:) option, does this mean that ALL of my forms are 100% secure? I will be collecting credit card information so this is a huge concern.. any info appreciated.

I suggest you review also the user guide on -How-can-I-receive-SSL-Submissions
To simplify also, the communication channel will be secure if you use the secure URL.
BUT it does NOT do any encryption on the form (i.e. email, form source code).
So, if another person is able to open the form, they will be able to see in plain text only the emails and codes in the form.
The payment integration you will use in the form is encrypted in a way because it will not be in JotForm. It will actually be the payment gateway/processor that will be doing the payment process.
