How to edit form email alert template

I cannot understand from this article how (or if) I can construct a Custom Notification email, selecting which fields shall appear, and in what order.

Yes, you can edit the email notification template. Field {tags} can be added from the right hand menu.

Yes it is possible to add your own block of text and also change the JotForm logo as well. Please check the screenshot below on how to change the logo and add texts:
