Hi. I want to setup a multiple subscription, where users can purchase multiple products for which they pay monthly. The form seems to allow this, but I cannot 'uncheck' the multiple checkbox.

Currently, you can only allow your customers to order and pay for one subscription item.
My suggestion is to let your customer fill out the same form twice in order to subscribe to two items in your form. We apologize for any inconvenience.

I will have to come up with another solution unfortunately, because we have 11 possible subscription products.

You can actually include all 11 subscription products into your form, but your customers can only purchase one subscription product at a time. S/he has to complete your form again to purchase another subscription product.
If you allow your customers to pre-pay your subscription products (this means one-time full payment at the start of subscription), you can use the Sell Products - Multiple Selection option instead as shown below:
This is opposed to the multiple monthly payments that Sell Subscription does to your customers.

It won’t work for us – a customer is not going to complete a form 5-6x on average every time we sign someone up.
No matter, will just setup a PayPal subscription account.
