Stripe is showing that I have not updated to the latest API (I'm still on 3/28/2014.) How do I know if it safe to roll to the latest API version (showing as 3/24/2015) in terms of JotForm?

The API came from Stripe, JotForm relies on that API in order for the data to be transferred smoothly between JotForm and Stripe. If the API needs to be updated, then we follow it otherwise, the payment will not be submitted. Stripe also updates their API if there are any issues or threats in regards to security.
I would recommend you getting the latest API from Stripe and then enter it on the Stripe integration here in JotForm.
