The reason why this happens Christian is because you have what is called a 'dirty' email notification. What this means actually is that it was at some point edited by you and as soon as you do that, new fields added to the jotform are not longer being added to the email as well.
So you will need to open the email notification and add the field manually.

If you create a new one it will however include all fields as well as add any new ones that get added (for as long as you do not make any changes to it).
