I am not seeing all the fields for mapping when I go to integrate with Zoho CRM. Is there a way that I can add more options to the dropdown list?

Dropdown list is supported in Zoho integration. I did not understand exactly where you want to add more options in the dropdown list - JotForm or Zoho.
Please refer to this guide and try to reintegrate Zoho if it is now working correctly:
