How do I get a total head count, rather than just submissions?

A form was created to get a count of how many people will be attending an event. How do I get a total count of how many people will be attending (as indicated in each individual submission), rather than simply number of submisssions?

Unfortunately this is not possible directly in JotForm.  However, you can export your submissions to an Excel file:

Once you have your data in excel format, you can simply add up the column that contains the number of people attending.
