I'm unsure which email is being sent to people after submitting the form. I would like to clean that up to ensure that everyone is getting the correct information after they register.

I assume you are referring to the form named "YPL 2015 Registration"?
To check the information that will be sent to the recipient address, you can click the existing notifications under "Emails" and check the email body/template there.
Here's the email template for your autoresponders. This is the information that the user will see.
Also, in your email settings for the autoresponder, you did not add a "Sender Email", this might cause problems like notifications will not be receive or they might be marked as spams.
To check the email history of your form, you can do that by navigating to your Account settings. You can follow this guide: http://www.jotform.com/help/293-How-to-view-all-your-form-Email-History. You can see where the notifications are being sent.
