More than one user on one account

Can I set up one account and have more than one user access it?  We are setting up an exit interview survey that we will be sending out and we want to have two people being able to access the data.

You can indeed set up sub-users for your account:

You create the forms under your account and then share them with the sub-account.  They will not have access to the account itself and you can set the permissions for each form.

We do only allow a certain number of sub users per each subscription level.  If you only need one though, you should be fine with a Free account.
