My plan is to send out an email to my customers after their job is installed. This email will be asking them to complete a customer satisfaction survey. Within that email will be their 'validation code' (which essentially allows me to track their identity). Can I set up a jot form to automatically aquire this code from the email and populate a field in the form?

Yes, you can auto-populate values on a form. What you can do is to create a hidden field on your form and the populate it from the URL of the form. This way you will be able to track the surveys.
Hidden field is under "Power Tools" toolbox on the form builder.
