When I attempt to edit the HTML source for my email notifications, I'm not seeing any code. The form still shows as normal, but I can't modify the underlying code.

I have cloned your form and tried to go the notification saved under Emails. I have clicked the HTML button on the Compose Email window of the Notification and it opened the HTML Source Editor window. I was able to view the HTML code of the notification.
what browser were you using when this happened? You can try to clear the browsing data of your web browser. and reload everything. By the way, I am using Google Chrome.

Also - and it might not be related - but when I went to edit the actual form I got a message that it was trying to load it and it was taking a long time. This never happened before."

This will allow you to clear cookies or site data for a specific website as this issue might be related to sessions.
