Once a form is submitted and appears in the submission area within JotForm, is there a way to edit the spreadsheet to allow web admins to store information about a submission?
For example, we've placed hidden fields in the form, when the user submits we need our admins to be able to keep track of various status items in the form.

Are you particular about having other users(admin) edit those submissions?
Also, you intend them having edit permission on hidden fields?
You can generate reports so that your colleagues will be able to see the submissions without logging in but they won't be able to edit them. But definitely, they are able to track entries in there.
