However, many people to whom I install Jotform (include me) have problems to received messages from your forms as they arrive in the "spam" mailbox (or never).
What can we do to avoid that ?

You have 2 options that should help prevent this from happening.
1. Change the Sender Email of your forms notification to firstname.lastname@example.org
2. Have your email provider whitelist our email server IPs:
