Is there a way to change a dropdown option list based on the time of year?

Ordering tickets for example and there's early bird, regular, and last-minute - where the prices change based on a specific time period?

Yes. You can achieve this adding Date/Time field and using Smart Forms using Condition Logic on the form.

In your case, you can add multiple dropdown with prices on them, and then use the DateTime condition to display which dropdown prices can be seen depending on the date/season.
