I went through the prompts to change the recipient email address but it defaults back to the original email. I tried 3 separate times after watching the video and reading the instructions and still it defaulted back to the original.

Hello. The Test Email button will always send an email to your default account email address, regardless of the recipients set on the notification. This limitation was implemented in our system to prevent spam and abuse.
The only way to properly test your Email Notification recipients is to do an actual submission on the form, and check your inboxes on those email addresses.
You can also refer to our guide on How to properly Change and Test a New Email Recipient Address, which basically says the same. To test other recipients, you must submit your form.
