I am intending to use the 'heading' function to create labels for my questions.
However, if I delete the default 'click to edit' wordings of the form tools, it will be replaced with '...'
Can I create the form tools with no labels ?

Don't use Headings for labels.
On the "Form Style" toolbar change "Label Align" to "Top Aligned". Then change "Font" and "Font Size" to make them larger. Here is a screenshot:

Thanks for your promptly response.
When I change the font size and font type under 'form style' the label and font options changed together.
Can I change the size and type of font within 'options 1,2,3 etc' seperately ?

Unfortunately no, it is not possible to set different font for the options.
You can try the "XXL" theme on the "Themes" button. Maybe it will do what you would like?
