We use your encryption key to safely receive contact forms from our website. However, while we can see the contact name, email, their messages are still showing up garbled. We thought it was a one-time thing but we're seeing a trend. Thanks for your help, I've attached a screenshot.

I'v checked the submissions in your account for Contact Us and Newsletter Sign Up forms. It seems that you have enabled encryption for these two forms and I'm able to see that the responses are encrypted for each field.
It seems that the screenshot in your post is not uploaded correctly. Could you provide us with the screenshot once again? Also, please let us know the form ID or URL that you have noticed the issue so that we can take a close look and provide you with necessary assistance.
