Some users have hundereds of forms, so they use it to categorize their forms and make it easy to find a particular form.
Another possible use is to hide forms that you do not need any more. It will unclutter your My Forms page to have an "Archives" folder and keep them there.

Folders are a great option to keep your forms organized. Furthermore it is also possible to nest them, allowing to do something like:
and so on. After all, what do folders are useful for in your o.s.?

Update: We have just released a new version of My Forms page. The folder should work better. Please give that a try.
