We've noticed that we've stopped receiving e-mails from Jot Form letting us know that a submission has been made. Is there anything we can do to fix this?

Please, try to set your sender address as noreply@jotform.com or noreply@formresponse.com , also you can refer to this guide to prevent bounces :
