I have just received a completed form via email but the reply email address is email@example.com
Why is this?

You can change the sender email of the notifications.
This User Guide article should help explain how to do that.
The problem with not using firstname.lastname@example.org as the sender email of your notifications, is a lot of email service providers can filter as spam, emails which dont originate from the same domain (i.e jotform.com) as that in the from address.
Unless you have the ability to whitelist our email server ip address, 22.214.171.124, 126.96.36.199, 188.8.131.52, 184.108.40.206, 220.127.116.11, leaving the sender email of your notfications as email@example.com may the best way to ensure our emails dont get blocked by your email service provider.
