I would really benefit from some kind of reminder or alert notification when something has been submitted... thank you!

You can set an email notification to be sent to you each time a form is submitted.
You can see how to do it here: Setting Up Email Notifications
Do note however that all new forms that you make will include the form notifier already set to go to your default email (the one that you use for your account) - which is easy to change.
If you still have them, but are not receiving any email notifications, do let us know and we would be happy to assist in resolving the same.
