I've created a form with fields for home, work and mobile phone number.
I don't necessarily need all but will require at least one contact telephone number entered.
I am asusming that I need to use the Conditions, but got confused as to how to set up the conditions to ensure at least one number is entered.

Check out the sample form below which demonstrates your goal:
Here are the conditions I used:
This form displays a Free Text warning and hides the Submit button when the phone number fields are skipped and the succeeding field (address) is filled.
Feel free to clone the sample form so you can inspect it for yourself.

Thank yoy. Sorry for taking so long to get back ... life got in the way. I am now trying to set up my form and ensure that at least one telephone number field is NOT empty. I've followed your example but when I get to the:
If All of these conditions are matched
Then Show .................... field
There is no You need to enter option in the selection box?

Janet, in order to understand Neil's sample, you need to clone his sample form and check the conditions. You can't see ''You need to enter..'' field because it's hidden. If the conditions don't match, form will show this field automatically and warn the submitter. I would suggest you to clone it and take a look at the conditions Neil has prepared for you.
And below is Neil's sample form's URL.
If you still can't figure it out, we will be more than happy to assist you further.
