Is there a way I can make the date of say 21/01/2016 appear as the 21st of January 2016 in thank you's and autoresponders?

I am sorry to say that, it is not possible with the ios7 Time widget. However, we can solve it with DateTime Tool.
Here is how to do:
Now, you can copy the name of your field.
Then, paste it to your Thank you Page.
For autoresponder, make the arrangements as you see below:
Please note that, at that situation, it will be shown as Sat Jan 09 2016.

The changes to the fields display settings are what makes the change. The example is using a regular date/time field, rather than the time widget.
