I went in and created a new email, selected notification email, completed sender/recipient details etc and then when I ran a test email, it came back to me instead of the email address I put in.

I checked your form and I can see there is only an Autoresponder, check this guide in order to know how to create an email notification : http://www.jotform.com/help/25-Setting-Up-Email-Notifications
You can add your custom email address by following this guide : http://www.jotform.com/help/238-How-to-Add-a-Custom-Sender-Address-to-an-Email-Alert
