I've set my payments to CAD however all payments processed come through in USD.
I've also set my stripe Dashboard default currency to CAD however when the jotform submission come in it is still USD.
My other applications which are connected to that stripe account submit transactions in CAD.
Can you help me resolve this issue?

I checked your form and unfortunately, I was not able to submit your form, however, I checked your submissions and I noticed that is not shown the total paid amount.
Could you please provide us some details about your payments ?
We need to get that info and if the issue is still there we will need to report it.
