I want one of the form fields to be an email address and when I click submit, the thank you page is automatically emailed to the address from the form

Thank you for contacting us.
I presume you are referring to send the answers to another email address additional to your email address, if so , you can do it by following this guide : http://www.jotform.com/help/39-Send-Notifications-to-Multiple-Recipients

as a paper print out for my business' quote letter for new prospective
customers. The Quote letter must be in sort of a standard format. The
emailed form is just a list, where as the Thank You page provides a more
custom layout.
What I was wanting to do is have the thank you page converted into a PDF
and automatically emailed to the email address that was input in the form.
Perhaps, what I am trying to do in outside of the intended functionality of
jotform?

Hello Voodoo8648,
Unfortunately it is not possible to convert your existing auto responder to PDF automatically but with a little workaround it is possible to achieve your requirement.
You can customize your Submission PDF template to display any text you want. You will have to add {pdf-link} in the auto responder email alert. When your form is submitted, users will receive the submission email which will have a click able link. Clicking on this link will display the customize PDF format to users. Please check the screenshot below:
