How can I add a Value to a Dropdown list automatically on submission

I'm making a instant quote system with jotform for my party magic stuff and I was wondering as I'm using dates if I can make it where when they submit the request and book me, the date would automatically be another option in the dropdown list so I can use conditional logic to check if the date is available.

You could set the conditions to check if those times are available - by adding the dates into the conditions themselves.

With the date reservation, will it stop other people from selecting that date?

Yes, you can use the "Date Reservation" widget like that. When a date is selected and the form is submitted, that date won't be available anymore.
