Hello. I am using JotForm to build an invoice form for my business. It seems that sometimes I go days without getting any emails notifications about submissions and I only know if I go into the submissions on the jot form website. Is there any reason for this in particular and is there a way to ensure I can get notifications? Thank You!

First of all, sorry for the inconvenience that you are experiencing. Are you receiving some of the email submissions after a long time? Please, confirm this because when I checked the mail log, I didn't see any failed record.
Below, you can see the recent part of your mail log:
Alternatively, you can use the "Daily Digest" App to cross check the submissions between your email submissions and actual submissions. This app calculates the submission changes on your account and sends a email to you with newly created submissions' contents.
