Can I change the date format from mm/dd/yyyy to dd/mm/yyyy

We would like to change our date format to dd/mm/yyyy.

How can I do this for all date instances.

You can change it on the DateTime field properties. Just click the DateTime field in your form then click the Date Format on the upper toolbar. You have to do this on every date fields.
