How can I get just the name and email address off of the forms as a batch download?

Are you referring when downloading your submissions data? 

You only need to download some fields, not all of them, is it correct? 

If this is correct then you can download only the fields that you need, please take a look on this guide, you will find the steps to create an Excel report and you will be able to include only the fields that you want: http://www.jotform.com/help/101-How-to-create-an-Excel-Report.
