I am trying to create a form for my "non-technical" friend and want the form submitted to go to HER email address and not mine. Where do I make that change? I don't see it under the "submit" button settings.

To do that you should check out the following guide: How to properly Change and Test a New Email Recipient Address.
It will show you how the email can be changed as well as properly tested out so that you can confirm the change.\

No, the steps above Deborah show you how to change the email of that single form. So once you follow them, you would only be changing the email templates of that specific form and not do anything to any other form in your account.
You can of course apply the same steps to any number of forms, if you wish to change more than one.
