As a few weeks we have not been receiving form submissions. Are there any logs that can be reviewed?

Yes, it is possible, indeed you may check the email history by following this guide: http://www.jotform.com/help/293-How-to-view-all-your-form-Email-History.
May be that you see that you are not receiving emails and this is because your email address is in our bounce list, this guide will help you with that: https://www.jotform.com/help/262-How-to-remove-your-email-address-from-bounce-lists.
Now, I have checked your email address and it is in our bounce list, this is the email that I checked and below is the reason why it is in our bounce list: m*****a.c*****o@h****r.com.
smtp; 554 Denied [CS] [9e4e2075.0.4898920.00-2201.9335099.s12p02m004.mxlogic.net] (Mode: normal)
I have removed it and you should receive your emails now, if this still happening you could ask your email provider to white-list our IP addresses as well, but this will work only if you are using our default sender email addresses, here is the link where you will find this info: http://www.jotform.com/help/145-Whitelisting-JotMails-IP-Addresses.
In the case that you want to re-send those failed emails you are also to do it by editing those submissions that were not delivered, while on the submissions page you need to click on the edit button.
Then you only need to click on the submit button and this will re-send the email with the submitted data:
