The guides on the support page look extremely different from what I see when I'm working with my forms.

What do I need to do to remove the "cutesy" version and use the easier to understand layout as seen in the guide?

You will not need to do anything to get the new Email Wizard. We will be rolling out the newly designed Email wizard to all our users very soon. All you need to do is wait until you see the new email wizard in your form builder. :)
