Can you change the field ID or Name?

No, it's not possible to change field ID's. Field ID's are automatically generated and save on your form's database, once it's changed the form will never work anymore.

it would be nice if we could identify the e-mail field through the same id in every form, this would enable us to prefab a function to pre populate them through the querystring parameters.
will it ever be possible? or should we generate e-mail fileds untill for example 'email7' is reached ;-)

I don't think that will be possible. If you need to have the same id for your fields, you may have to create a template form and add all the fields with the ids. Now you can clone this form and add other fields so that the input Id of old fields remains same.

How do you change the field name?
I mean I *gotta* be able to change the field name, right? Not talking id, talking name. And when creating a field I get to name the field, don't I?
Not being able to name and rename the fields is just *way* too much of on the developers and the programmers that will be required to always modify their program to the jot form, and never be able to eith edit jot forms to the program or have both be consistent with guildlines.
Seriously. I *have* to be able to name the fields and to change the names of the fields once named.
