Eu gostaria de substituí-lo por outro texto em Português ou se possível também gostaria de substituí-lo por uma imagem

To my understanding, you would like to update the text displayed when you add {pdf-link} to the Thank-You page, is that correct? 

I would like to apologize, however, that is not possible, but here's a workaround that you can do to achieve the same.

You will need to use this URL: 

https://submit.jotform.com/server.php?action=getSubmissionPDF&sid={id}&formID=61726308702958

Again, the one highlighted in yellow is your formID.

The URL, when accessed, will download a PDF copy of a submission base on the submission {id} of a specific form.

Then, you will use that custom URL and create a link with your own text.
