Why am I getting an email telling me that I have reached 1000 requests when I have only received 2 actual filled out forms from clients?

Don't worry, this has nothing to do with you form submissions limit.
This was reached by the apps or APIs being used in your My Account section. https://www.jotform.com/myaccount/api
It seems like the Back-Up app was the one doing a lot of API calls. This was the reason you got a notification about the API limit reached.
The API Key limits reset every day midnight EST.
These are the daily limits per account type.
