I browsed to a pdf file which I thought would help my last question, but was then told I had an error on the form. I then saw I was only allowed to upload jpgs etc. As the only jpg I had was not that useful, I didn't want to send that, so I just wanted to remove the pdf. But I couldn't find a way of doing so without replacing it with the jpg ! Have I missed something ?

You can easily remove an uploaded file by clicking the "Trash Bin" icon.
If you are referring to editing a form submission, it is possible as well. You can open a submitted form and edit the values entered by the user. Here's a guide on how to edit submissions: How-to-Edit-Submissions-Made-on-Your-Forms
