I'd like to have follow-up emails trigger based off date & time perimeters.
I use JotForm to track trucks that are arriving at different loading sites. I'd like to have a follow up email sent out 2 hours before they are set to arrive to confirm everything is still on schedule. The triggered email would pull from a few different fields, automatically inserting the destination, etc.
Is something like this possible?

We have a feature to schedule auto-responders so that the email shall be sent automatically on the date specified. However, the scheduled auto-responders are triggered automatically every hour until the auto-responder is sent and the time cannot be set at the moment. You may find this setting from the Advanced section of the auto-responder.
You can create multiple auto-responders for setting up multiple schedules.

Unfortunately, yes. The feature to schedule the email by time is currently not available.
This thread has been forwarded to our backend team as a feature request for evaluation. We cannot provide you any ETA at the moment. But, once we have any update in this regard you'll be posted here.
