Please help me my email is being email@example.com. what did I do to warrant this? Please help

I have now removed your email from the bounce list.
You may also would like to check your junk mail folder and see if you received submissions that landed there, it would be better if you can remove it from that list and then add firstname.lastname@example.org to your address book.
It may also be due to the sender's email address that is set in your email notifications. I suggest that you change the sender's email address notification to email@example.com, from Your Email field.

after thinking about it- if i change that in the senders email notification will I get the real email from that person in the form??

Yes, adding the email address to your email account's address book can help but is not an absolute solution. The purpose of the address book is also for reference that the email address is coming from a trusted source. Thus, will not be tagged as spam by your email account's spam filter.
Yes, you can still get the sender's email address either from the content of the email. If you wish to send the email back to the form user on just hitting the reply button, you can create a new email notification which will provide the Reply-To e-mail field, just below the sender e-mail field
