I have tested Numeric Slider widget on my sample form and I was able to replicate mentioned issue. If form is submitted with default option "false" is shown inside of email Notification and on submission page there is no data.
I will escalate this issue to our developers and we will inform you via this thread once this issue is resolved.
For now as possible workaround you can set Numeric Slider widget to be required. This way your users will need to use slider widget. For example they will need to scroll slider to 2 and that scroll it back to 1.
