Yes, you can change the Sender E-mail. But i wouldn't suggest that. Because it's also possible that some of your notification emails might be blocked by your mail provider. Because they won't recognize the submitters email address. And you won't be able to get a notification. JotForm's sender email has already been whitelisted by most of the email providers.
If you want to reply to your submitters directly form the notification email you receive, you can use the Reply-To Email feature. You can find it under Email Alerts > Notification > Reply-To Recipient Settings > Reply-To Email.
