Can I add the information into a database like MS Access?

We would like to use this for people to signup for our events and classes. How can I set up the information to be put into a database like Access?

Yes, you can forward data from your forms into your own database. This will require a bit of custom PHP coding, where your web developer will need to write PHP codes for forwarding the data you receive from the forms into your own database.
