When we submit a form, the email is not showing us all of the data from all of the fields that we filled out. I double checked that the fields are all filled out, and that the form is setup to send all field data.

In this case simply delete your notification:
And create a new one: https://www.jotform.com/help/25-Setting-Up-Email-Notifications
In this way, all your form fields will be updated in the new notification. Let us know if you need more help.
