We like to fill in some details for our customers. Are staff in the office able to do this? Also, is it possible to edit a form once it has been completed. For example a customer changes their mind, can we make changes to the form and resend out for signature?

If you want to have pre-defined fields, you can set values to fields in the form builder. As I have checked your form named "Clone of Training Application Form", I have seen that you already have a pre-defined text area.

Yes, it is possible. You need to set an edit link to the autoresponder email as you can find in the following document: https://www.jotform.com/help/40-How-to-Let-Users-Update-Their-Form-Submissions-at-a-Later-Date

This is a totally different case from the previous one. If a customer changes their mind, why do you want to change the form? If a customer changes mind, she or he can edit the submission.
If you delete a field from a form after submission completed, you will lose that data forever.
