We had email notification set up to send all form submissions to firstname.lastname@example.org and noticed that a few submissions have never shown up in the mailbox.

None of your form emails have failed to our end. You can check your email history to view this: https://www.jotform.com/help/293-How-to-view-all-your-form-Email-History.
The emails may have been filtered as spam, so I would suggest checking that and make sure to mark our emails as not spam. Please check this guide to troubleshoot it further:
