If you mean you want to change the email address associated with your account. you can do it by going to MyAccount Profile and change your email address there.
However, if you mean you want to change the email settings of your form, you can edit the email template by following the instructions provided in this guide: How to Edit the Email Template for Notifications and Autoresponders.
